Red Rock is made in the style of a young Wisconsin Cheddar, but with a twist. P. Roqueforti (the mold in most blue cheeses) is included in the starter cultures and when the finished cheese is punctured with large spikes, the earthy mold stripes the cheddar.

Red Rock is made in Wisconsin using pasteurized cow’s milk and traditional rennet. Red Rock is cut, by hand, when you order it. For this reason, weights are approximate.
