Le Gruyère AOP is a popular firm Alpine cheese from Switzerland and is made from Silage free milk. Its history dates back to the Roman Empire, when cheese makers would purchase lumber from the “gruyere” forest regions to fuel the curd cooking kettles. Each wheel of Kaltbach le Gruyère AOP is a carefully selected for extra aging (a minimum of 12 months) in the ancient Kaltbach sandstone caves, resulting in a truly unique Alpine delight.
Kaltbach le Gruyère AOP is made in Switzerland using unpasteurized (raw) cow’s milk and traditional rennet. Gruyère is cut, by hand, when it is ordered. For this reason, weights are approximate.
